Doesn’t that look delicious…well it was and it’s super easy to make.
After a great Sunday of intense workouts, house chores, and running errands it’s nice to create a dinner that is light, refreshing and of course easy to make. That is why my hubby and I have created the Davis Chicken Lettuce Wraps.
Ingredients:
- Red grapes
- Celery
- Apples
- Almonds
- Chicken
- Salt
- Pepper
- Mayo
- Sriracha
- Lettuce
Because of my love for watching Anne Burrell on The Food Network channel, I always prep all my required ingredients before I start cooking aka Mise en Place. Thank you Anne!
Before you start, place three chicken breast into a crockpot and season with salt and pepper. Place it on high for 2-3 hours.
While your chicken is cooking, quarter the red grapes (roughly 15), thinly slice 4 celery sticks, dice 1-2 apples (remove the cork), and thinly chop almonds (I usually throw 15-20 whole almonds in a zip lock bag and pound them into smaller pieces).
Once your chicken is cooked, shred the chicken and place in a large bowl. Add the almonds, apples, celery and grapes to the chicken and mix. Once mixed add a small amount of mayo and season with salt and pepper.
Wash the lettuce and you’re ready to plate! Since my hubby doesn’t like a ton of spicy food, I add Sriracha to my lettuce wrap at the end. Enjoy and happy eating!
